Eliss and I spent a wonderful evening at Tetsuya's, probably the best restaurant in Sydney for a Christmas Dinner.
The restaurant offers sophisticated and intimate private dining overlooking a Japanese garden.
Tetsuya’s cuisine is unique, based on the Japanese philosophy of natural seasonal flavours, enhanced by classic French technique.
This is the first time I'm at this place, and the first time on a degustation menu. It was really an experience of a lifetime.
We had the Tetsuya’s renowned degustation set menu which consisted of:

Cold Corn Soup with Basil Ice Cream

Tartare of Tuna on Sushi Rice with Avocado

Tuna Marinated in Soy and Mirin
Marinated NZ Scampi with Chicken Parfait & Walnut
Soft Smoked Ocean Trout with Asparagus
Confit of Petuna Tasmanian Ocean Trout with Konbu, Daikon & Fennel

Eliss and I enjoying the freshness of the confit of fish.

A close up of the signature dish of Tetsuya.
Seasonal Green Salad
Ravioli of Queensland Spanner Crab with Tomato & Basil Vinaigrette
Grilled Breast of Duck with Braised Witlof & Orange Jus
Grilled Wagyu Beef with Asian Mushrooms & Lime Jus
Pineapple & Yoghurt Sorbet
Strawberry Shortcake
Vanilla Bean Ice Cream with White Beans & Dates
Floating Island with Praline & Vanilla Bean Anglaise
Coffee or Tea & Petit Four
The service was really fine dining style, which reminded me of my SHATEC days doing practical lessons on service at the training restaurant. Immaculate service followed by good knowledge.
I initially thought that since this is a tasting menu, the portions will be miniscule. I was however very full after the 10 course dinner and a very satisfied man.
